Dessert wine - sweet Vino da Tavola 2005
GRAPE VARIETIES: Sauvignon, Semillon, Riesling
DESCRIPTION: A golden yellow colour with amber highlights. Intense and persistent scent that are reminiscent of apricots, jam, honey and nuts. The flavour confirms the sensations perceived on the nose, and herb-like hints give added complexity.
SERVING SUGGESTION: Rich dark chocolate, nuts, dry pastries in general and excellent with blue or strongly flavoured cheeses.
ORIGIN: 0,30 ha facing east (at an altitude of 190 m above sea level) in the small vineyard next to the country house in the hamlet of Cantrina near Bedizzole. Planted in 1991 with a density of 5.000 vines per hectare, with guyot trained vines. Medium deep, sub-alkaline Red, sub-alkaline soils, consisting mainly of red clay.
YIELD PER HECTARE: 16,50 hl
GRAPE HARVEST: September.
VINIFICATION: After a careful selection of the bunches, the grapes were dried for about 3 months in crates before being pressed in a pneumatic press. The must was left to clarify and then fermented in 100% new French oak barriques, where it remained for a total of 24 months.
ANALYTICAL DATA: Alcohol 11%, Residual Sugar 190 g/l, Acidity 7,20 g/l .
BOTTLING: December 2008.
TOTAL PRODUCTION: 2.000 bottles from 375 cl.
